Tasting notes
The "Akitsuho" rice, the raw material for this sake, is extremely important to Kaze no Mori. It has supported the brand's sake brewing since its inception in 1998. All of the rice is grown under contract with local farmers, playing a key role in creating sake that emphasizes terroir. This sake, made using this "Akitsuho" rice, is a fine sake that could be considered the origin of Kaze no Mori. The aroma exhibits a slight carbonation resulting from fermentation, a key characteristic of Kaze no Mori. The aroma is gentle yet full of natural flavor and presence. It offers sweet fruity notes of white grapes and banana, with fresh nuances of quince and pear. Floral notes include acacia and honeysuckle, as well as a mineral-like aroma. The aroma of ripe apple and pear fills the mouth, creating an overall natural, full-bodied, and gentle aroma. The mouthfeel is rich and rounded, with a light and smooth impression typical of unpasteurized sake. The rhythmic stimulation of the slight carbonation is also pleasant, creating a full-bodied attack. The palate begins with a smooth, mellow sweetness, followed by a rounded, juicy umami. A refreshing, sweet-and-sour acidity brings the whole thing together in a balanced way. A youthful, slightly bitter note in the latter half adds depth to the palate, helping to balance out the juicy flavor that develops in the middle without becoming overbearing. The firm acidity in the aftertaste also beautifully cuts through the alcohol. The finish leaves a lingering impression of blood orange.
