About Hakkaisan Hakkaisan, one of the most famous sake brands not only in Japan but also around the world. It was established at 1922, Nagamori 1051, Minami Uonuma City, Niigata, Japan. No matter how times change, Hakkaisan always adhere to the philosophy of ''Brings out the essence of good material with every possible effort.'' For this Daiginjo, Yamadanishiki and Gohyakumangoku sake rice are carefully selected and polished down to 45% remaining. All the koji is handmade and this sake is brewed with an especially pure snowmelt mountain stream water, which is known as Raiden-sama no Mizu or water of the god Raiden. The Hakkaisan Daiginjyo Sake is brewed only during the winter season, resulting in has a clean and elegant flavor.
